Spicy Szechuan Green Beans

Spicy Szechuan Green Beans

Ingredients

  • 1 (lb) green beans, haricots verts, or Chinese longbeans
  • 1 (tbsp) garlic, chopped
  • 1 (tbsp) ginger, chopped
  • 2 scallions (white parts only), finely chopped
  • 1/2 (tsp) chili paste (SAMBAL BRAND)
  • 1 (tbsp) dark soy sauce
  • 1/2 (tsp) sugar
  • 1/4 (tsp) salt (or to taste)
  • 2 tbsp peanut or vegetable oil (or as needed)

Instructions

  1. Preparing Green Beans: Wash, drain thoroughly, and trim tops and bottoms. Slice beans diagonally into 2-inch pieces. Chop garlic, ginger, and scallions.
  2. Dry-Frying: Heat 1 tablespoon oil over medium heat. Stir-fry green beans until they shrivel, 'pucker,' and turn brown (6–7 minutes for longbeans). Remove and drain in a colander.
  3. Cooking Aromatics: Heat 1 tablespoon oil in a wok over high heat. Add garlic, ginger, and scallions. Stir-fry for a few seconds, then add chili paste and stir-fry briefly until aromatic.
  4. Assembling: Add green beans, dark soy sauce, sugar, salt, and pepper (if using). Stir well to combine. Taste and adjust seasoning as needed. Serve hot.

Notes

Optional: add pepper to taste
